Grilled chicken meatballs with buttery cauliflower mash and wild mushrooms
From the foundersAlexander Eriksson·Founder & CEO

A nutritious, low-carb take on Swedish meatballs and mash, cooked straight on the barbecue with juicy chicken mince and creamy cauliflower mash.
Ingredients
2 servings
- 500 gboneless chicken thighs 🏷️
- 600 gcauliflower
- 15 gSwedish salted butter 🏷️
- 1 dlLactose-free cooking cream alternative 4% 🏷️
- 1 stbrown onion
- 150 gchanterelles or other mushrooms
- 0.5 tskallspice
- 1 tsksalt and black pepper
How to make it
- 1
Heat the barbecue to medium-high, set up for direct and indirect heat.
- 2
Blitz the chicken thigh fillets into mince unless you have bought ready-made mince. Mix the mince with grated onion, ground allspice, salt and black pepper.
- 3
Shape the mince into 12 large meatballs or patties. Thread them onto skewers for easier handling if you like.
- 4
Place the cauliflower florets in a barbecue-safe dish with 0.5 dl water, cover with a lid or foil and steam on the barbecue until tender, approx. 10-12 minutes.
- 5
Grill the chicken meatballs directly over the coals for approx. 8-10 minutes until nicely browned and cooked through (72°C).
- 6
Put the mushrooms in a small barbecue tray and let them soften and take on a smoky flavour for a couple of minutes at the side.
- 7
Drain off any excess water from the cauliflower. Mash the cauliflower with butter and lactose-free cooking cream to a smooth, creamy mash. Season with salt and pepper.
- 8
Serve the grilled chicken meatballs with the warm cauliflower mash and the grilled mushrooms.
Kitchen tips
- Use a fine potato ricer or masher to make the cauliflower mash really smooth.
- Skewers make it much easier to turn the meatballs without them sticking to the grill.
