Classic Swedish yellow pea soup with salted pork
A hearty, traditional Swedish pea soup from the northern home-cooking tradition, slowly simmered with yellow peas, thyme, marjoram and pork belly.

Ingredients

2 servings

  • 250 gyellow peas (dried, soaked)
  • 250 gpork belly
  • 2 stcarrots
  • 1 stbrown onion
  • 2 stvegetable stock cube
  • 1 tskdried thyme
  • 1 tskdried marjoram
  • 2 mskSkåne mustard (Swedish coarse mustard)

How to make it

  1. 1

Rinse the pre-soaked yellow peas thoroughly.

  2. 2

Peel and finely chop the onion. Peel the carrots and cut them into rounds.

  3. 3

Dice the pork belly, or keep it in one piece to dice later.

  4. 4

Put the peas, onion, carrots, pork, stock cubes, thyme and marjoram in a large saucepan. Pour over about 1.2 litres of water so everything is well covered.

  5. 5

Bring to the boil and skim off the white foam that forms on the surface with a spoon.

  6. 6

Lower the heat and simmer the soup, covered, for about 45-50 minutes until the peas are soft and have split.

  7. 7

If the pork was cooked whole, lift it out, dice it and stir it back into the soup.

  8. 8

Season the soup with Skåne mustard, salt and freshly ground black pepper before serving.

Kitchen tips

  • Skim the soup thoroughly at the start to remove loose pea skins and get a clearer broth.
  • Soak the peas in plenty of water at least 12 hours in advance.
