Ingredients
2 servings
- 600 gchicken breast fillet
- 240 gtinned chickpeas (rinsed)
- 250 gaubergine
- 3 msktomato purée
- 2 mskapple cider vinegar
- 1 mskDijon mustard
- 1 mskgranulated or liquid sweetener
- 1.5 msksmoked paprika
- 1.5 tskgarlic powder
- 1 tskground cumin
- 1 tskliquid smoke
- 1.5 mskolive oil
- 0.5 stlime
How to make it
- 1
Mix the tomato purée, apple cider vinegar, Dijon mustard, sweetener, 1 tbsp of the smoked paprika, 1 tsp garlic powder, liquid smoke and 1 tbsp water directly in your Crockpot to make a smooth BBQ sauce.
- 2
Place the chicken fillets in the Crockpot and turn them so they are well coated in the BBQ sauce.
- 3
Put the lid on and cook on LOW for 3–4 hours (or HIGH for 1.5–2 hours) until the chicken is completely tender and juicy. You can serve the fillets whole or shred the meat with two forks into pulled chicken.
- 4
When about 10 minutes of the chicken's cooking time remain, cut the aubergine into 1 cm cubes and rinse the chickpeas.
- 5
Heat the olive oil in a frying pan or wok over high heat. Add the aubergine, chickpeas, cumin, the rest of the smoked paprika (0.5 tbsp) and the garlic powder (0.5 tsp).
- 6
Stir-fry for 6-8 minutes until the aubergine is soft and the chickpeas are nicely coloured. Squeeze over lime juice and season with salt.
- 7
Serve the tender BBQ chicken (whole or shredded) with plenty of BBQ sauce from the slow cooker and the spiced chickpeas and aubergine.
Kitchen tips
- Depending on how much liquid the chicken releases, you can lift it out and reduce the sauce in a pan or on sauté mode in the Crockpot if you want a thicker glaze.
- The chicken shreds easily (pulled chicken) straight in the sauce for extra flavour in every bite.
