Creamy Cajun Salmon with Oven-Baked Mushrooms and Tomatoes
Oven-baked salmon seasoned with bold Cajun spice, served with oven-roasted mushrooms, sweet tomatoes and fresh baby spinach.

Ingredients

2 servings

  • 250 gSalmon fillet
  • 250 gMushrooms
  • 200 gRomantica vine tomatoes
  • 65 gBaby spinach
  • 1 dlQuark 10% (or light crème fraîche)
  • 1 mskOlive oil
  • 1.5 mskCajun seasoning
  • 1 mskLemon juice

How to make it

  1. 1

Preheat the oven to 200 degrees.

  2. 2

Quarter the mushrooms and place them in an ovenproof dish together with the vine tomatoes.

  3. 3

Drizzle the olive oil over the vegetables and sprinkle with a little salt and half the Cajun seasoning.

  4. 4

Season the salmon fillets all over with the rest of the Cajun seasoning and place them on top of the vegetables in the dish.

  5. 5

Bake in the middle of the oven for about 15-20 minutes until the salmon is cooked through and the vegetables have taken on a nice colour.

  6. 6

Take out the dish, squeeze over a little fresh lemon juice and gently fold in the baby spinach and quark so it melts together into a creamy pan sauce at the bottom before serving.

Kitchen tips

  • The salmon stays really juicy in a lunchbox thanks to the creamy pan sauce at the bottom of the dish.
  • If you want more carbs, simply cook some pearled wheat or quinoa on the side.
