- 1 stonion
- 1 stred pepper
- 1 stgreen pepper
- 1.5 mskrapeseed oil
- 1 tskground cumin
- 1 tskpaprika
- 0.5 tskchilli powder
- 0.5 tskgarlic powder
- 4 sttortilla wraps (medium)
- 0.5 stICA Class 1 cucumber
- 0.5 dlsoured cream
How to make it
- 1
Cut the chicken breast into thin strips. Deseed and slice the peppers, and peel and slice the onion.
- 2
Mix the cumin, paprika, chilli powder, garlic powder, 1 tsp salt and 1 ml black pepper in a small bowl.
- 3
Finely dice the cucumber to make the cucumber salsa. Mix with a little salt and a squeeze of lime or some vinegar if you have it.
- 4
Heat half the rapeseed oil in a large frying pan over a high heat. Fry the chicken until nicely browned and cooked through, about 5-7 minutes. Lift the chicken out of the pan.
- 5
Add the rest of the oil to the pan. Fry the peppers and onion over a medium-high heat for 3-4 minutes until slightly softened but still with some bite.
- 6
Return the chicken to the frying pan, sprinkle over the spice mix and stir well so everything is coated. Fry for a further 1-2 minutes.
- 7
Warm the tortillas according to the packet instructions. Fill them with the spicy fajita mixture, crunchy cucumber salsa and a dollop of soured cream.
Kitchen tips
- A high heat and quick frying are key to keeping the vegetables crisp.
- Squeeze over a little fresh lime juice just before serving for a lovely tangy kick.
