Shred the white cabbage and cut the carrots into thin batons or rounds.
- 4
Toss the vegetables with a pinch of salt and spread them over a baking tray lined with baking paper.
- 5
Place the marinated chicken thigh fillets on top of the vegetables so the chicken juices drip onto the cabbage as it cooks.

Roast in the middle of the oven for approx. 20-25 minutes until the chicken is cooked through and nicely browned.
- 7
Squeeze a little fresh lime juice over the tray and crumble over some feta when serving for a lovely saltiness and tang.
Kitchen tips
- Massage a little salt into the white cabbage before spreading it on the tray so it softens faster and gets a better texture.
- Use flaky sea salt when serving for extra crunch.
