  • 250 gbroccoli
  • 1 stpepper
  • 1.5 mskJapanese soy sauce
  • 1 mskfish sauce
  • 1 mskoyster sauce
  • 1 mskneutral oil
  • 1 krukafresh basil (Thai basil if possible)

How to make it

  1. 1

Finely chop the garlic and red chilli. Cut the chicken breast fillet into small dice (or chop coarsely).

  2. 2

Cut the broccoli into small florets and slice the pepper and spring onion.

  3. 3

Heat the oil in a large frying pan or wok over high heat.

  4. 4

Fry the garlic and chilli for about 30 seconds until fragrant but not burnt.

  5. 5

Add the chicken and brown it, stirring, for about 3-4 minutes until nicely coloured.

  6. 6

Stir in the broccoli and pepper and stir-fry for another 2 minutes so the vegetables stay crisp.

  7. 7

Add the soy sauce, fish sauce and oyster sauce. Stir well so everything is glazed.

  8. 8

Take the pan off the heat and fold in the fresh basil and spring onion so they soften slightly. Serve straight away.

Kitchen tips

  • Use high heat to get a proper wok feel and keep the vegetables crisp.
  • Want extra heat? Leave the chilli seeds in!
