Italian pork fillet piccata with rich tomato sauce and fried courgette
Tender pork fillet coated in parmesan and egg, fried until golden and served with a rich tomato sauce and lightly sautéed courgette.

Ingredients

2 servings

  • 500 gpork fillet
  • 40 gparmesan
  • 2 steggs
  • 1 mskbutter 🏷️
  • 1 mskolive oil
  • 400 gchopped tomatoes
  • 2 msktomato purée
  • 2 stgarlic cloves
  • 1 stcourgette
  • 1 stpepper
  • 200 gcherry tomatoes
  • 0.5 stlemon
  • 1 tskdried oregano

How to make it

  1. 1

Gently flatten the pork fillet medallions with the palm of your hand so they are an even thickness (about 1 cm). Season with salt and pepper.

  2. 2

Whisk the eggs in one bowl and put the finely grated parmesan in another.

  3. 3

Heat half the butter and olive oil in a frying pan.

  4. 4

Dip the pieces of meat first in the egg and then in the parmesan so they are completely coated.

  5. 5

Fry the meat over a medium-high heat for about 2-3 minutes per side until the coating is golden brown and crisp. Remove from the pan and keep warm.

  6. 6

Sauté the finely chopped garlic and tomato purée in the same pan for 1 minute. Pour in the chopped tomatoes, oregano and the juice of the lemon. Simmer for 8-10 minutes until the sauce thickens. Season to taste with salt and pepper.

  7. 7

In another pan, sauté the sliced courgette, diced pepper and cherry tomatoes in the rest of the fat over a high heat for 4-5 minutes so they colour nicely but keep their bite. Squeeze over a little lemon juice.

  8. 8

Serve the piccata with the rich tomato sauce and the sautéed vegetables.

Kitchen tips

  • Keep the heat at medium when frying the piccata; too high a heat burns the parmesan before the meat is cooked through.
  • Grate the parmesan really finely with a grater or microplane so it sticks to the meat best.
