Classic crisp protein waffles with cinnamon-fried apples
Crisp Swedish waffles made with sparkling water and a protein-rich batter, served with warm cinnamon-fried Royal Gala apples and creamy vanilla quark.

Ingredients

2 servings

  • 4 steggs
  • 300 gquark 0.2%
  • 80 goat flour
  • 1.5 dlsparkling water
  • 1 tskbaking powder
  • 0.5 tskground cardamom seeds
  • 15 gBregott (butter and rapeseed oil spread)
  • 2 stRoyal Gala apples
  • 1 tskcinnamon
  • 200 gvanilla quark with no added sugar

How to make it

  1. 1

Core the apples and dice them into small pieces.

  2. 2

Melt half the Bregott in a pan over medium heat, add the diced apple and cinnamon. Fry for about 5-7 minutes until the apples have softened and turned glossy.

  3. 3

Whisk together the eggs, quark (0.2%), oat flour, baking powder and ground cardamom into a smooth batter.

  4. 4

Gently stir in the ice-cold sparkling water just before cooking to keep the bubbles.

  5. 5

Heat the waffle iron thoroughly and lightly grease it with the rest of the Bregott.

  6. 6

Cook the waffles until golden and really crisp, about 3-4 minutes per waffle.

  7. 7

Serve the hot waffles straight away topped with the cinnamon-fried apples and a dollop of cool vanilla quark.

Kitchen tips

  • Make sure the waffle iron is really hot before you pour in the batter – that's the key to crispness.
  • Use ice-cold sparkling water and don't stir too much once it has been added.
