Korean BBQ trio with marinated minute steak and crunchy vegetables
Three classic Korean marinades – bulgogi with grated pear, hot-and-sweet gochujang and fragrant sesame and garlic – served with thinly sliced beef and crunchy carrots.

Ingredients

2 servings

  • 500 gbeef minute steak
  • 2 mskKorean gochujang chilli paste
  • 0.5 stpear
  • 4 mskJapanese soy sauce
  • 1.5 msktoasted sesame oil
  • 6 stgarlic cloves
  • 1 mskfresh ginger
  • 4 stspring onions
  • 1 msktoasted sesame seeds
  • 400 gcarrots
  • 200 glettuce leaves (little gem or romaine)
  • 1 tskhoney

How to make it

  1. 1

Marinade 1 (bulgogi soy/pear): Finely grate 0.5 pear, 2 garlic cloves and a little ginger. Mix with 3 tbsp soy sauce, 0.5 tbsp sesame oil, 1 tsp honey and half the chopped spring onion.

  2. 2

Marinade 2 (gochujang hot/sweet): Mix 2 tbsp gochujang, 1 tbsp soy sauce, 1 finely chopped garlic clove, 0.5 tbsp sesame oil and 1 tbsp water.

  3. 3

Marinade 3 (sesame and garlic): Mix 3 finely grated garlic cloves, 0.5 tbsp sesame oil, 1 tbsp toasted sesame seeds, salt and black pepper.

  4. 4

Cut the minute steak into thin strips. Divide the meat between three bowls and toss each with its marinade. Leave to rest in the fridge for 15 minutes.

  5. 5

Cut the carrots into thin batons and rinse the lettuce leaves.

  6. 6

Light the barbecue (or heat a griddle pan on the hob over the highest heat). Fry or grill the meat in batches very briefly – about 1-2 minutes per side so the marinade caramelises without the meat drying out.

  7. 7

Serve the freshly grilled meat wrapped in fresh lettuce leaves with the carrot batons.

Kitchen tips

  • Grate the pear really finely — the enzymes in pear break down the fibres in the meat and make it incredibly tender in a short time.
  • Make sure the pan or barbecue is smoking hot before adding the meat for the best dark, caramelised crust.
