Slow-cooked pork loin with apple, onion and mustard
Tender pork loin slow-cooked with onion, apple and mustard, served with potatoes and carrots. Classic Swedish home cooking with a tangy, savoury edge.

Ingredients

1 serving

  • 190 gboneless pork loin
  • 1 stonion
  • 0.5 stapple
  • 0.75 mskwholegrain mustard
  • 0.75 mskapple cider vinegar
  • 1.5 dlchicken stock
  • 0.5 tskthyme
  • 230 gboiled potatoes
  • 1 stcarrot
  • 0.75 mskbutter
  • 1 dloat cream
  • 0.75 krmsalt and pepper

How to make it

  1. 1

Season the pork loin with salt and pepper. Brown it in butter in a frying pan or in the slow cooker on the sauté setting until coloured on all sides.

  2. 2

Roughly slice the onion and apple; peel and slice the carrot. Put them in the slow cooker.

  3. 3

Place the meat on top. Mix the stock, mustard, vinegar and thyme and pour over.

  4. 4

Cook on low for 8 hours (or on high for about 5 hours) until the meat is really tender.

  5. 5

Boil the potatoes on the hob in salted water for about 20 minutes until tender.

  6. 6

Lift out the meat and vegetables. Set the slow cooker to sauté, or reduce the cooking liquid in a saucepan for a few minutes, and stir in the oat cream.

  7. 7

Season to taste with salt, pepper and a little more vinegar. Serve the meat with the potatoes, vegetables and sauce.

Kitchen tips

  • Browning adds a lot of flavour, so don't skip it.
  • Only add the oat cream after the slow cooking so it doesn't split.
  • A touch of acidity at the end, such as vinegar or mustard, lifts the sauce.
