From the foundersAlexander Eriksson·Founder & CEO

Classic Swedish meatballs made with mixed beef and pork mince, served with a lower-carb potato mash, lactose-free cream sauce and lingonberries.
Ingredients
2 servings
- 400 gbeef and pork mince
- 250 gpotatoes
- 300 gcauliflower
- 1 stbrown onion
- 2.5 dlFlora Mat 4% lactose-free cooking cream alternative
- 15 gSwedish butter 82%
- 1 stegg
- 0.5 tskground allspice
- 1 stbeef stock cube
- 1 mskChinese soy sauce
- 2 mskstirred lingonberries
How to make it
- 1
Peel the potatoes and cut them into smaller pieces. Trim the cauliflower and cut it into florets. Boil the potatoes in lightly salted water for about 10 minutes, add the cauliflower and boil for a further 8-10 minutes until everything is completely soft.
- 2
Finely chop or grate the brown onion. Mix the mince, grated onion, egg, ground allspice, 1/2 tsp salt and 1 ml black pepper in a bowl.
- 3
With wet hands, shape the mince into about 12-14 even meatballs.
- 4
Heat the butter in a frying pan. Fry the meatballs over a medium-high heat for about 8-10 minutes until nicely browned and cooked through. Remove the meatballs from the pan and keep them warm.
- 5
Pour the 4% cooking cream alternative into the same pan along with the crumbled beef stock cube and Chinese soy sauce. Simmer for 3-4 minutes to a flavourful cream sauce. Season with pepper.
- 6
Drain the potatoes and cauliflower. Mash together with a potato masher or electric whisk. Stir in a splash of the cream sauce for extra creaminess. Season with salt and pepper.
- 7
Serve the meatballs with the warm mash, the rich cream sauce and a spoonful of stirred lingonberries.
Kitchen tips
- Mixing cauliflower into the potato mash cuts the carbohydrates considerably while adding volume and a lovely texture.
- Grate the onion rather than chopping it so it binds the meatball mixture better and the meatballs don't fall apart when frying.
